Carrot Cake Smoothie

I’m so happy with how this turned out! it’s AMAZING!!. You’ll need a juicer and a blender for this recipe.

Recipe
1 Cup of carrots juice

4 Bananas (2 frozen)

1 cup of fresh pineapple

Pinch of cinnamon

1/2 a pinch of cardamon

Method
– Firstly juice your carrots, the carrots I used were huge so I only needed 3 to make a cup.

– Then add your bananas, pineapple, carrot juice and spices to the blender and blend.

– To get the balance of spices right, you might like to just blend the fruit and juice and then add cinnamon and cardamon to taste.

Recipe
6 x frozen bananas
1/4 cup raspberries
2 x tea spoons of mint
handful of spinach

Method
– Put 3 x bananas and the raspberries in a blender/food processor and blend. Add more raspberries if its not pink enough, then set the mix aside
– Put 3 x bananas, the mint & spinach in a blender/food processor and blend. Taste the mixture and add more mint if you desire.
– Layer the mixtures on top of each other and that’s it.

Banana, Pineapple & Raspberry Swirl Smoothie

This smoothie takes a little more time to make but well worth it!

Recipe
3 x bananas
1 cup of raspberries
1 cup fresh pineapple

Method
– Put bananas, pineapple and 1/2 a cup of raspberries in the blender…blend and set aside the smoothie.
– With the other 1/2 cup of raspberries but them in a bowl and add a little water and mix until it becomes a sauce.
– Pour in about 1 cup of smoothie, then spoon in some raspberry sauce (make sure you run the sauce down the side of the glass). Alternate layers of smoothie and raspberry sauce until you reach the top.
– Top with raspberries…and your done!

Three Layer Smoothie: Raspberry. Mango. Spinach

I love the way layered smoothies look, they’re so pretty. Making them does however create a large amount of dishes…totally worth it if you ask me!

Recipe

3 x Bananas
2/3 cup Mango
2/3 cup of Raspberries
100 grams of Spinach
2 Cups of water

Method

– Put 3 x bananas and water in the blender and blend.
– Evenly separate the contents of the blender into 3 separate glasses/bowls or what ever you want to use (make sure the top of your glass is big enough to fit a spoon into it).
– Place 1/3 of the mixture back into the blender with the mango and blend. Put the contents back into your glass.
– Place another 1/3 of the mixture into the blender and add the raspberries. once this is blended place into a separate glass
– Then place the final 1/3 of the mixture in the blender and add the spinach…blend. Place in a separate glass. So you should have 3 separate glasses of smoothies.
– Now place the thickest layer in the bottom of a big glass or jar. With the next thickest layer, get a spoon and spoon the smoothie into your jar containing the thickest layer, making sure to run the smoothie down the sides of the jar.
– Flowing the same method of spooning the smoothie down the side of the jar, add the final layer.
– Top with your favorite fruit or enjoy as is 🙂

Sweet Potato with Corn Salsa & Lime

Sweet potato is so delicious! topped with corn salsa its even better!. This recipe is really easy, only a little bit of prep involved and its vegan, gluten free & dairy free. Yay!

Recipe
1x Medium Sweet Potato
1x Small Red Capsicum
1x Tin of Corn
1/2 a cup of coriander
1x Tomato
1x lime
1x Tablespoon of Red Onion/Spring Onion

Method
– Set the oven to 180 degrees celsius.
– Wrap the sweet potato in aluminium foil and put in the oven for 50-60mins or until you its soft when you squeeze it with an oven mitt (if you’re pressed for time, chop the potato in half to speed up the cooking time).
– While to potato is cooking, drain the corn and put it in a bowl, dice the tomato, finely chop the capsicum and the onion, then add them to the corn.
– Roughly chop the coriander and add the the bowl of corn/tomato, then squeeze the juice of half a lime over the mixture. Put the salsa mix in the fridge and sit back and relax until the sweet potato is cooked.
– Remove the potato from the oven and squeeze lime all over it. Then add the corn salsa and you’re done! super easy!

*Adding some black beans would be a delicious!

Passion Fruit & Raspberry Chia Pudding

Chia seeds are so amazing! Not only can you make them into delicious pudding but they’re packed with omega 3, fiber and magnesium. Yum!. This recipe is really easy and delicious.

Recipe
1/4 cup chia seeds
1 tin coconut milk
1/4 cup raspberries
2x passionfruits

Method
– Firstly, put your chia seeds and coconut milk into a jar/container, mix them around and put them in the fridge.
– About 30 minutes later, give them another mix and leave them in the fridge overnight.
– Get your raspberries and mash them up with a spoon (I use defrosted frozen raspberries as they’re much more affordable). Then cut open the passion fruit.
– Layer chia pudding with the raspberry sauce & passion fruit, top with some extra raspberries and your done.
– You can add a little honey or maple syrup to the pudding if its not sweet enough, but I find its just right with the sweetness from the fruit. Enjoy!

*Chopped banana would be a delicious addition.

Slushies are so easy to make and so refreshing. Make sure you put your banana & watermelon in the freezer the night before, so its frozen when you need to use it.

Zucchini Noodles

Zucchini Noodles

Zucchini noodles are a super healthy and delicious alternative to pasta. This recipe is vegan, gluten free, dairy free and raw, with no fancy difficult to find ingredients.

Recipe
2x zucchini
1x avocado
The juice of half a lime
1x tea spoon of red onion
1 small garlic clove
Pinch of paprika
1x tablespoon of coriander

-First get your zucchinis and turn them into noodles. I bought my handheld vegetable spiraliser off eBay for less than $10, which works perfectly with zucchini. Alternatively you can use a vegetable peeler to create noodle like slivers.
– In a separate bowl mash the avocado, then add lime juice, paprika, garlic & onion. Once combined add this too the noodles and mix it thoroughly. Add a little salt and pepper.
– chop the coriander and mix it through, then your done. So simple and easy!
